Creamy Vegetable Chowder

I took Dr. Fuhrman’s “Golden Austrian Cauliflower Cream Soup” and tweaked it to our liking. Now Tom says, “I could eat this EVERY night!” It really is phenomenal that it can taste so good and be high-nutrient, too!  We have this in our “favorites” menu rotation.
Ingredients:
  • 1 1/2 cups red lentils, washed
  • 2 leeks, sliced thinly into rings (the white and light green part)
  • 1 TBS Kirkland No-Salt seasoning
  • Garlic, 2 cloves (see my “Roasted Garlic All Year” recipe)
  • 1 TBS or cube vegetable bouillon (low-salt or no-salt)
  • 6 cups water, heated to boiling
Directions:
Add above to pressure cooker container and cook on “HIGH” pressure for 5 minutes. Quick release pressure. Remove cover so steam is away from you. Smush garlic cloves against side of container and stir well.

Ingredients (Part 2):

  • Cauliflower, 1 head, cut into bite-sized pieces
  • Carrots, 3, cut into “coins”
  • Celery, 3 stalks, sliced
  • Mushrooms, 1 cup, chopped
  • 1 TBS Kirkland No-Salt seasoning
  • Large bunch of kale (or chard or collards or spinach), washed and chopped into bite-sized pieces (we use the inside stems)

Directions (Part 2):

Add above to PC pot and cook on regular heat (brown, saute, or simmer–I just lay my PC lid on top of the pot, unsealed, to avoid splashing and keep in heat). Add in cashew cream (see below).

Ingredients (Part 3):

  • 1-cup raw cashews
  • 1-cup water

Directions (Part 3):

Put cashews and water into high-powered blender (I use my NutriBullet for this small amount.) VROOM for 15 seconds at a time until completely blended into a cashew cream. Pour into soup. Add 1/2 cup-to 1-cup water into blender and vroom for 15 seconds to clean the container. Pour that liquid into the soup, and stir well.  Taste test until soup veg are cooked to your liking.

ENJOY!!

Note: You can make this soup without a pressure cooker. I would start cooking the first set of ingredients, and eventually add the second set and cook until veg and greens are tender. I haven’t ever tried this, so you are on your own here! It might need more liquid/broth because of evaporation and longer cooking times.
