I’ve had a Vita-Mix for more than 20 years now, and it would be one thing I would take to a desert island! It makes easy work of this Strawberry-Banana Freeze. I’ve called it “a blender on steroids”! Your regular blender might be able to come close, but will probably have unblended bits of frozen fruit, or less than perfect texture.
- 1 frozen banana (I put mine in the freezer, with the peel on, when they are freckled)
- 1 C. large frozen strawberries, around 5 (I can get a big bag of frozen strawberries from Costco)
- 1/4 to 1/2 C. Cranberry Juice Light, or any sweet fruit juice or soy milk or nut milk you like
Put frozen banana into a warm bowl of water and let sit several seconds. Then hold under “warm” tap water and wash the peel off. Break banana into 2 pieces and put into Vita-Mix. Add frozen strawberries to Vita-Mix container, along with juice.
Put machine on variable speed and move knob from 1-to-10, then turn to “HIGH”. Push fruit into blades with tamper. Process until fruit is pureed and mixture pulls from the corners, down into the center of the container (see picture on right). Stop and portion into dessert bowls. Serves 2.
